A couple of homemade chocolate tuile biscuits would be a perfect sweet treat with a cup of coffee, because coffee and homemade chocolate tuiles go really well together. They are small, crispy, waffle-thin and very elegant biscuits. You just can’t stop eating them.
It is very fast and easy to make them. However, it may take some time and practice to make them perfect. But once you get the idea of the baking and curling process, you can start using 2 trays at a time by putting one tray in while taking another out.
Good luck.
Ingredients:
2 egg whites
½ cup castor sugar
4 Tbsp plain flour
60g butter, melted
2 tsp vanilla essence
2 tsp cocoa
2 tsp milk
Makes: about 35
Chocolate Tuiles Recipe:
1. Beat egg whites until soft peaks form.

2. Add sugar gradually and continue beating until sugar is dissolved.

3. Fold half of sifted flour, cooled butter and vanilla essence. Mix until combined. Fold the other half of flour, butter and vanilla and mix again. Put 4 Tbsp of mixture into a separate small bowl. Stir sifted cocoa and milk into the larger part of mixture.

4. Grease a tray or you can use a greased non-stick baking paper on a tray. Put teaspoonfuls of chocolate mixture about 10 cm apart on a tray. Using back of teaspoon spread mixture evenly to about 7-8 cm in diameter. Using piping bag and a small plain tube, pipe 3-4 lines across chocolate mixture. Take a skewer and draw lines at about 1cm intervals in alternate directions.

5. Bake in moderate oven for about 4-5 min or until tuile biscuits are set around edges. Lift them carefully with spatula and immediately place over rolling pin to curl.

6. It will take a couple of minutes to firm, after that you can remove tuiles from the pin.

Storage:
You can make chocolate tuile biscuits up to 2 days ahead. Store them in an airtight container. They are not suitable to freeze or microwave.
